Sushihatsu Souhonten is a long-standing sushi restaurant with a deep history that extends back to when it was founded in 1910 on the "Sushiya-dori" shopping street near Asakusa Station.
In an effort to inject a sense of newness into our venerable tradition, we renovated and relaunched the restaurant in 2022. We work hard to create an approachable dining atmosphere where everyone regardless of age or gender can casually enjoy Edo-mae sushi in a modern dining setting.
Our sushi suits a wide variety of occasions, including treating someone to a meal, enjoying a memorable sightseeing experience in Asakusa, or whatever else you are looking for.
Tradition
Our Edo-mae style of sushi has been passed down from each generation to the next. These techniques are wide-ranging, and there are a variety of arrangements in preparing it, including everything from preparing the sushi rice and other ingredients, all the way up to the nigiri hand-pressing techniques used to make it. All of these traditional methods that were created and honed by our predecessors go into each piece of sushi.
Newness
Modernization has radically altered what people in Japan eat. Our restaurant offers dishes that take in the essence of Western food culture and its universal presence, and then draw out new ways of enjoying sushi and Japanese cuisine.

The rich and acidic balsamic sauce allows you to enjoy a blend of Japanese and Western styles.
Medium-fatty Tuna
It's specially sliced in a way that highlights the umami flavor and high-quality fattiness that is inherent to this specific cut of tuna.
Squid
The pure white squid offers a nice contrast when paired with our pitch black homemade squid ink salt. This sushi is remarkable for its sweetness.
Salmon Roe
Its bubble-like texture and rich taste will fill your mouth with so much flavor that your face will be practically beaming with delight before you even realize it.

Japanese Sake
The seafood we have on offer is mainly brought in from Toyama Prefecture, which means that we also have an extensive selection of sake made in Toyama Prefecture. Every bottle we have is a well-regarded brand of sake with a mildness and tame acidity that pairs perfectly with the umami flavor of the fish.

Our restaurant offers a relaxing ambiance with a chic color scheme throughout the interior. We recommend our counter seating in particular, which features a firsthand view of our sushi chef’s expert techniques for an up-close and personal experience.
